Contains eggs, gluten. Check the labels on packaged ingredients:

  • dried breadcrumbs. Breadcrumbs can contain soya or milk; check the label.

Cooking steps

  1. Heat the oven to 220°C / 425°F (200°C fan) and oil a baking tray with a little of the oil.

  2. Lay each chicken breast between two sheets of baking paper and beat it out with a rolling pin until it is an even 1 cm thick all over.

  3. Set out three plates: the flour on one, the beaten egg on the second, the breadcrumbs on the third. Coat each piece in that order, pressing the crumbs on firmly.

  4. Lay them on the tray, drizzle the remaining oil over the top and bake for 16 to 20 minutes, turning once, until golden.

Cooked when: 74°C / 165°F in the thickest part. A food thermometer is the reliable way to tell.

  5. Steam the green beans for 5 minutes while the chicken bakes, then dress them with the lemon juice and the parsley.

The useful detail

Beat the chicken to an even thickness before it is coated. A breast is thick at one end and thin at the other, and left as it comes the thin end is dry long before the thick end is safe.

Make it work for you

One serving is 150 g of crumbed chicken with half the green beans. You can switch to a smaller portion in the ingredients above; it is three quarters of this, and it contains correspondingly less energy and protein. It is an option, not a goal.

  • Turkey breast instead of chicken

Leaner and firmer, and it dries faster, so check it earlier.

Per serving: about 10 kcal less, about 2 g more protein, about 2 g less fat.

  • Gluten-free breadcrumbs and flour

    No difference once baked.

Allergens: Needed if you avoid gluten.

  • Ground almonds instead of breadcrumbs

Richer and it colours faster, so drop the oven to 200°C.

Per serving: about 40 kcal more, about 2 g more protein, about 9 g more fat.

Allergens: Adds tree nuts, removes gluten.

Estimated nutrition

Per standard serving, calculated from the ingredients above. Nutrition changes with substitutions, brands and how much oil stays in the pan.

A crumbed chicken baked rather than shallow fried, which is most of the difference in calories between this and the dish it copies.

Each ingredient’s weight is multiplied by its USDA FoodData Central values per 100 g. The whole recipe is added up and divided by 2. Raw weights are used for meat, fish and vegetables; beans and lentils are drained weights. All of the oil is counted as eaten. Added salt is not included; sodium from stock, bread, cheese and tinned food is.

Storage and reheating

In the fridge
Cool, cover and refrigerate within 2 hours of cooking. Eat within 3 to 4 days. The coating softens in the fridge; crisp it in a hot oven rather than a microwave.
In the freezer
The FDA chart gives cooked poultry dishes 4 to 6 months in the freezer for best quality.
Reheating
Reheat until it reaches 74°C / 165°F, steaming hot throughout.

Checked against US Food and Drug Administration, Refrigerator and Freezer Storage Chart, USDA Food Safety and Inspection Service, Leftovers and Food Safety, FoodSafety.gov, Safe Minimum Internal Temperatures and FoodSafety.gov, Cold Food Storage Chart. UK guidance from the Food Standards Agency is shorter, at two days for most leftovers.
