  • tortillas. Wheat tortillas often contain soya and sometimes milk; check the label.

Cooking steps

  1. Mash the avocado with the lime juice until it is spreadable but still has some texture.

  2. Shred the cabbage as finely as you can; it is standing in for the crunch a lettuce would give.

  3. Warm the tortillas briefly in a dry pan so they roll without cracking.

  4. Spread the avocado down the middle of each, leaving a clear border, then add the chicken, cabbage, yoghurt and coriander.

  5. Fold the bottom up, then roll from one side, keeping it tight. Cut in half on the diagonal.

The useful detail

Roll it tightly and cut it on the diagonal. A loose wrap falls open at the second bite, and the diagonal cut is what holds the filling in place while you eat the rest.

Make it work for you

  • Cooked turkey instead of chicken
