Warm the oil in a wide pan over medium-high heat. Brown the chicken for 3 to 4 minutes, turning once, then lower the heat.
Add the mushrooms and cook for 5 minutes, until they have given up their liquid. Add the pepper, tomatoes, stock and oregano.
Simmer gently, uncovered, for 15 to 18 minutes, until the chicken is cooked through and the sauce has thickened.
Cooked when: 74°C / 165°F in the thickest part. A food thermometer is the reliable way to tell.
Meanwhile, bring the water to the boil in a second pan. Pour in the polenta in a thin stream, whisking, then cook over low heat for 5 to 8 minutes, stirring often, until thick and smooth.
Spoon the polenta into two shallow bowls and ladle the chicken and sauce over it.
Keep the braise at a gentle simmer to avoid toughening the chicken. Breast meat firms and dries at a rolling boil; at a bare simmer it stays tender while the sauce reduces.
One serving is Half the braise over half the polenta. You can switch to a smaller portion in the ingredients above; it is three quarters of this, and it contains correspondingly less energy and protein. It is an option, not a goal.
Turkey breast instead of chicken

Chestnut mushrooms instead of white
