Contains gluten, milk. Check the labels on packaged ingredients:

  • chicken stock. Stock often contains celery, and sometimes gluten or soya; check the label.
  • Parmesan. Parmigiano Reggiano is made with animal rennet, so it is not vegetarian. Vegetarian Italian-style hard cheeses are widely sold.

Cooking steps

  1. Cook the rice in boiling water, following the packet, then drain it and keep it covered.

  2. Warm the oil in a frying pan over medium heat and brown the chicken for 3 minutes on each side.

  3. Scatter the flour into the pan and stir for a minute. Add the stock a little at a time, then the milk, stirring so the sauce stays smooth.

  4. Simmer gently for 8 to 10 minutes, turning the chicken once, until it is cooked through and the sauce coats a spoon.

    Cooked when: 74°C / 165°F in the thickest part. A food thermometer is the reliable way to tell.

  5. Stir in the spinach until it wilts, then the Parmesan. Serve over the rice.

The useful detail

Add liquid gradually after the flour to keep the sauce smooth. All at once, the flour clumps before it can swell, and the lumps never quite disappear.

Make it work for you

One serving is 140 g of chicken (raw weight) with half the sauce and rice. You can switch to a smaller portion in the ingredients above; it is three quarters of this, and it contains correspondingly less energy and protein. It is an option, not a goal.

Storage and reheating

In the fridge
Cool, cover and refrigerate within 2 hours of cooking. Eat within 3 to 4 days. The sauce thickens in the fridge; loosen it with milk or water.
In the freezer
The FDA chart gives cooked poultry dishes 4 to 6 months in the freezer for best quality.
Reheating
Reheat until it reaches 74°C / 165°F, steaming hot throughout.
