Cooking steps

  1. Warm the oil in a large pan over medium-high heat and cook the mushrooms for 6 to 8 minutes, until browned. Add the onion and cook for 5 minutes more.

  2. Add the spelt and stock, bring to the boil and simmer for 25 to 30 minutes, until the grains are tender but still chewy.

  3. Add the chicken and simmer for 8 to 10 minutes, until cooked through.

    Cooked when: 74°C / 165°F in the thickest part. A food thermometer is the reliable way to tell.

  4. Stir in the parsley and serve.

The useful detail

Validate the cooking time of the spelt you buy. Pearled spelt is tender in about 25 minutes; whole spelt takes an hour and needs soaking first, and the packet will say which it is.

Make it work for you

One serving is A large bowl, half the pan. You can switch to a smaller portion in the ingredients above; it is three quarters of this, and it contains correspondingly less energy and protein. It is an option, not a goal.

  • Pearl barley instead of spelt

    Softer and starchier, and it thickens the broth more.

  • Turkey breast instead of chicken

    Leaner, with the same safe endpoint.

  • Chestnut mushrooms

Storage and reheating

In the fridge

Reheating
Reheat until it reaches 74°C / 165°F, steaming hot throughout, stirring so it heats evenly.
