Cooking steps

  1. Bring the stock and thyme to a bare simmer in a pan just wide enough to hold the chicken in one layer. The surface should barely move.

  2. Lower in the chicken breasts, cover and poach for 14 to 16 minutes, turning once. Never let it boil.

    Cooked when: 74°C / 165°F in the thickest part. A food thermometer is the reliable way to tell.

  3. Lift the chicken out onto a board and leave it to rest for 5 minutes.

  4. Add the drained beans and the oil to the poaching stock and warm for 3 minutes, then stir in the spinach until it wilts.

  5. Slice the chicken thickly, stir the lemon juice into the beans and return the chicken with any juices from the board.

The useful detail

A bare simmer, never a boil. Moving water pulls chicken breast tight and squeezes the moisture out of it within a couple of minutes, and no amount of sauce puts it back.

Make it work for you

One serving is 150 g of chicken with half the beans and spinach. You can switch to a smaller portion in the ingredients above; it is three quarters of this, and it contains correspondingly less energy and protein. It is an option, not a goal.

  • Butter beans instead of white beans

Storage and reheating

In the fridge
Cool, cover and refrigerate within 2 hours of cooking. Eat within 3 to 4 days. The beans absorb the liquid as they sit, so keep a little stock back to loosen them.
In the freezer
The FDA chart gives cooked poultry dishes 4 to 6 months in the freezer for best quality.
Reheating
Reheat until it reaches 74°C / 165°F, steaming hot throughout.
