  • roasted red peppers from a jar. Jarred peppers are packed in brine and can contain sulphites; check the label.

Cooking steps

  1. Put the couscous in a heatproof bowl, pour the boiling water over, cover with a plate and leave for 5 minutes.

  2. Fork it through and spread it out to let the steam escape. If you cover it while it is still steaming and put it straight in the fridge, it sits wet and warm, which is exactly what you do not want.

  3. Add the chicken, peppers and cucumber.

  4. Thin the yoghurt with a spoonful of water, stir in the parsley and spoon it over the bowls.

The useful detail

Let steam escape from couscous before covering it for chilling. Trapped steam turns the grains to paste and keeps the bowl warm for far longer than it should be.

Make it work for you

One serving is A bowl, half the mixture. You can switch to a smaller portion in the ingredients above; it is three quarters of this, and it contains correspondingly less energy and protein. It is an option, not a goal.

  • Cooked turkey instead of chicken

    Leaner and drier.
