  • chicken stock. Stock often contains celery, and sometimes gluten or soya; check the label.

Cooking steps

  1. Bring the stock to a simmer in a large pan with the carrot and ginger and cook for 6 minutes.

  2. Add the chicken and the noodles and simmer for 6 to 8 minutes, until the chicken is cooked through and the noodles are tender. Check the packet: noodles vary from two minutes to ten.

    Cooked when: 74°C / 165°F in the thickest part. A food thermometer is the reliable way to tell.

  3. Add the sweetcorn and heat through for a minute.

  4. Stir in the parsley and serve.

The useful detail

Choose the noodle type before finalising timing and allergens. Egg noodles, rice noodles and wheat noodles cook at different speeds and carry different allergens, and the figures here are for dried egg noodles.

Make it work for you

One serving is A large bowl, half the pan. You can switch to a smaller portion in the ingredients above; it is three quarters of this, and it contains correspondingly less energy and protein. It is an option, not a goal.

  • Rice noodles

    Lighter, and free of egg and wheat. They cook faster, so add them near the end. Nutrition is not recalculated.

    Allergens: Removes egg and gluten.

  • Turkey breast instead of chicken

    Leaner, with the same safe endpoint.

    Per serving: about 10 kcal less, about 1 g more protein, about 1 g less fat.

  • Frozen sweetcorn

    Add it straight from frozen with the noodles. Nutrition is not recalculated.

Storage and reheating

In the fridge

In the freezer

Reheating
Reheat until it reaches 74°C / 165°F, steaming hot throughout, stirring so it heats evenly.
