Heat the oven to 200°C / 400°F (180°C fan). Toss the carrots with the oil on a lined tray and roast for 20 to 25 minutes, until tender and browned at the edges.
Warm the tortillas briefly in a dry pan so they fold without cracking.
Spread each with hummus and lay the chicken, carrots and parsley in a narrow line down the middle rather than spreading them to the edges.
Fold in the sides, roll tightly and cut each wrap in half.
Keep filling in a narrow line so the wrap closes easily. Spread to the edges, the filling stops the tortilla meeting itself and the whole thing unrolls on the plate.
One serving is One wrap. You can switch to a smaller portion in the ingredients above; it is three quarters of this, and it contains correspondingly less energy and protein. It is an option, not a goal.
Cooked turkey instead of chicken
Leaner and drier; the hummus matters more.
