Cooking steps

  1. Warm the oil in a large pan over medium heat and cook the carrot for 6 minutes.

  2. Add the stock, chickpeas and oregano and simmer for 10 minutes, until the carrot is nearly tender.

  3. Add the chicken and the courgette and simmer for 8 to 10 minutes, until the chicken is cooked through and the courgette still holds its shape.

    Cooked when: 74°C / 165°F in the thickest part. A food thermometer is the reliable way to tell.

  4. Stir in the parsley and serve.

The useful detail

Add courgette near the end so it retains some shape. Ten minutes is its limit in a simmering broth; beyond that it collapses into threads.

Make it work for you

One serving is A large bowl, half the pan. You can switch to a smaller portion in the ingredients above; it is three quarters of this, and it contains correspondingly less energy and protein. It is an option, not a goal.

  • Turkey breast instead of chicken

    Leaner, with the same safe endpoint.

  • White beans instead of chickpeas

    Softer, and they thicken the broth as they break down.
