Cooking steps

  1. Use rice you have just cooked and cooled, or rice that was cooled within an hour of cooking and kept in the fridge. Rice is the one grain where this matters.

  2. Mix the yoghurt, lime juice and coriander into a dressing.

  3. Divide the rice between two bowls and add the prawns and cucumber.

  4. Dice the avocado last, just before serving, and add it with the dressing spooned over.

The useful detail

Cut avocado shortly before serving. It browns within minutes of being cut, and no amount of lime juice stops it for long.

Make it work for you

One serving is A bowl, half the mixture. You can switch to a smaller portion in the ingredients above; it is three quarters of this, and it contains correspondingly less energy and protein. It is an option, not a goal.

  • Cooked chicken instead of prawns

    Milder and drier.

Eat within 24 hours of the rice being cooked, and do not reheat it. Cut avocado does not keep.

Eaten cold. Cooked rice should be reheated only once, and this bowl is not meant to be reheated at all.
