Contains crustaceans, milk. Check the labels on packaged ingredients:

  • polenta. Maize is not a gluten cereal, but some polenta is milled alongside wheat; check the packet if you avoid gluten.

Cooking steps

  1. Bring the water and milk to the boil in a saucepan. Pour in the polenta in a thin stream, whisking, then cook over low heat for 5 to 8 minutes, stirring, until thick but still loose enough to spoon.

  2. Meanwhile, warm the oil in a frying pan over medium-high heat and cook the sweetcorn for 3 minutes, until it starts to colour.

  3. Add the prawns and paprika and cook for 3 to 4 minutes, turning, until the prawns are opaque and firm right through.

    Cooked when: opaque and firm right through, with no glassy flesh left.

  4. Spoon the polenta into two shallow bowls, top with the prawns and sweetcorn and scatter the parsley over.

The useful detail

Keep the polenta loose enough to spoon easily. It firms as it cools in the bowl, so what looks slightly too soft in the pan is right at the table.

Make it work for you

One serving is Half the polenta with half the prawns. You can switch to a smaller portion in the ingredients above; it is three quarters of this, and it contains correspondingly less energy and protein. It is an option, not a goal.

  • Cooked prawns

    Add them at the very end, only to heat through.

    Per serving: about 20 kcal more, about 5 g more protein, about the same fat.

  • Frozen sweetcorn

    Thaw and drain it first, or it waters the pan. Nutrition is not recalculated.

  • Smoked paprika instead of mild

    Smokier and darker. The figures use the same record either way.

Storage and reheating

In the fridge
Cool, cover and refrigerate within 2 hours of cooking. Eat within 3 to 4 days. Polenta sets solid once cold; loosen it with water or milk over low heat.
In the freezer
The FDA chart gives cooked fish 4 to 6 months in the freezer for best quality.
Reheating
Reheat until it reaches 74°C / 165°F, steaming hot throughout.
