Contains fish, gluten.

Cooking steps

  1. Put the couscous in a bowl, pour the boiling water over it, cover with a plate and leave it for 5 minutes.

  2. Pat the tilapia dry. Warm the oil in a non-stick frying pan over medium-high heat and cook the fillets for 3 minutes on each side.

Cooked when: 63°C / 145°F, or until the flesh is opaque and flakes easily. A food thermometer is the reliable way to tell.

  3. Fork the couscous through, separating the grains. Use a fork and not a spoon.

  4. Chop the tomatoes, the parsley and the mint, and stir them through the couscous with the lemon juice.

  5. Serve the tilapia on the couscous, with any oil from the pan spooned over.

The useful detail

Separate the couscous with a fork rather than a spoon. A spoon presses the grains together into a block, and once it has compacted there is no getting it light again.

Make it work for you

One serving is 150 g of tilapia over half the couscous. You can switch to a smaller portion in the ingredients above; it is three quarters of this, and it contains correspondingly less energy and protein. It is an option, not a goal.

  • Hake instead of tilapia

Flakier and a little softer. The same timing.

Per serving: about 10 kcal less, about 3 g less protein, about 1 g less fat.

  • Quinoa instead of couscous

Nuttier with more bite. Quinoa is gluten-free and couscous is wheat.

Per serving: about 10 kcal less, about the same protein, about 3 g more fat.

    Allergens: Removes gluten.

  • Fresh coriander instead of mint

Sharper and more citrus. The same weight.

Per serving: about the same energy, about the same protein, about the same fat.

Estimated nutrition

Per standard serving, calculated from the ingredients above. Nutrition changes with substitutions, brands and how much oil stays in the pan.

The quickest fish dinner here at about twenty minutes, with a very lean white fish carrying most of the protein.

Each ingredient’s weight is multiplied by its USDA FoodData Central values per 100 g. The whole recipe is added up and divided by 2. Raw weights are used for meat, fish and vegetables; beans and lentils are drained weights. All of the oil is counted as eaten. Added salt is not included; sodium from stock, bread, cheese and tinned food is.

Storage and reheating

In the fridge
Cool, cover and refrigerate within 2 hours of cooking. Eat within 3 to 4 days. The couscous is good cold as a salad the next day.
In the freezer
The FDA chart gives cooked fish 4 to 6 months in the freezer for best quality.
Reheating
Reheat until it reaches 74°C / 165°F, steaming hot throughout.

Checked against US Food and Drug Administration, Refrigerator and Freezer Storage Chart, USDA Food Safety and Inspection Service, Leftovers and Food Safety, FoodSafety.gov, Safe Minimum Internal Temperatures and FoodSafety.gov, Cold Food Storage Chart. UK guidance from the Food Standards Agency is shorter, at two days for most leftovers.
