Heat the oven to 190°C / 375°F (170°C fan). Cook the rice in boiling water, following the packet, then drain it.
Put the pepper halves cut side up in a baking dish and roast them for 15 minutes, while you make the filling.
Warm the oil in a frying pan over medium heat. Add the onion and cook for 4 minutes, then add the turkey and cook for 5 to 6 minutes, breaking it apart, until it is cooked through.
Cooked when: 74°C / 165°F in the thickest part. A food thermometer is the reliable way to tell.
Stir in the tomatoes and oregano and simmer for 5 minutes, until thick. Fold in the rice and parsley.
Spoon the filling into the pepper halves and bake for 15 to 20 minutes, until the peppers are tender and the filling is hot all the way through.
Pre-roasting the peppers prevents a firm shell around an overcooked filling. Fifteen minutes alone starts them softening, so both parts are ready at the same time.
One serving is Two filled pepper halves. You can switch to a smaller portion in the ingredients above; it is three quarters of this, and it contains correspondingly less energy and protein. It is an option, not a goal.
Chicken mince instead of turkey

Cooked lentils instead of the rice
Earthier and softer, and it makes a denser filling. Use about 200 g of cooked lentils in place of the dry rice.
