  • pitas. Pita can contain soya or sesame; check the label.

Cooking steps

  1. Cut the chicken into 3 cm cubes. Mix 100 g of the Greek yoghurt with half the lemon juice, the oil, two of the grated garlic cloves, the cumin, paprika and cinnamon, and turn the chicken through it. Cover and refrigerate for at least 30 minutes and up to 24 hours.

  2. If using wooden skewers, soak 8 of them in water for 30 minutes and trim them to fit the basket. Cut the red pepper and the onion into 3 cm pieces and thread them onto the skewers between the chicken cubes.

  3. Air fry at 200°C / 400°F for 12 to 14 minutes in a single layer, in two batches if needed, turning the skewers halfway, until the edges have charred in places and the thickest cube reads 74°C.

Cooked when: 74°C / 165°F in the thickest part. A food thermometer is the reliable way to tell.

  4. While the chicken cooks, stir the rest of the garlic and the rest of the lemon juice into the remaining 200 g of Greek yoghurt. Shred the romaine and chop the tomatoes.

  5. Warm the pitas in the air fryer for 1 minute. Serve two skewers each with a pita, the romaine and tomatoes, and the garlic yoghurt.

The useful detail

The yoghurt in the marinade is what chars. Its milk sugars and protein brown in the air fryer's dry heat well before the chicken can overcook, which gives the edges the colour a shawarma spit gets from hours of turning, and the acid keeps lean breast meat tender in the meantime.

Make it work for you

One serving is Two skewers with a pita, romaine, tomato and garlic yoghurt. You can switch to a smaller portion in the ingredients above; it is three quarters of this, and it contains correspondingly less energy and protein. It is an option, not a goal.

  • Turkey breast instead of chicken

    Firmer and milder. Same times.

Per serving: about 10 kcal less, about 2 g more protein, about 2 g less fat.

  • Brown rice instead of pita

Makes a bowl instead of a pocket.

Per serving: about 35 kcal less, about 3 g less protein, about the same fat.

    Allergens: Removes gluten.

  • Fat-free Greek yoghurt instead of 2%

Sharper, and the marinade chars a little less.

Per serving: about 10 kcal less, about the same protein, about 1 g less fat.

Estimated nutrition

Per standard serving, calculated from the ingredients above. Nutrition changes with substitutions, brands and how much oil stays in the pan.

Chicken carries most of the protein and the yoghurt adds more in both the marinade and the sauce; the pita and salad make it a meal.

Each ingredient’s weight is multiplied by its USDA FoodData Central values per 100 g. The whole recipe is added up and divided by 4. Raw weights are used for meat, fish and vegetables; beans and lentils are drained weights. All of the oil is counted as eaten. Added salt is not included; sodium from stock, bread, cheese and tinned food is.

Storage and reheating

In the fridge
Cool, cover and refrigerate within 2 hours of cooking. Eat within 3 to 4 days. Keep the garlic yoghurt in its own covered pot.
In the freezer
The FDA chart gives cooked poultry dishes 4 to 6 months in the freezer for best quality. Freeze the cooked chicken and vegetables off the skewers, without the yoghurt, pita or salad.
Reheating
Reheat until it reaches 74°C / 165°F, steaming hot throughout.

Checked against US Food and Drug Administration, Refrigerator and Freezer Storage Chart, USDA Food Safety and Inspection Service, Leftovers and Food Safety, FoodSafety.gov, Safe Minimum Internal Temperatures and FoodSafety.gov, Cold Food Storage Chart. UK guidance from the Food Standards Agency is shorter, at two days for most leftovers.
