Check off ingredients as you go.

No regulated allergens in the ingredients as listed. Check the labels on packaged ingredients:

  • chopped tomatoes. Tinned tomatoes vary in added salt; the sodium figure uses a standard salted tin.
  • black beans. The record is for a reduced-salt tin. Standard tins carry more sodium; rinsing removes some of it.

Cooking steps

  1. Soften the sliced garlic in the oil over low heat for 2 minutes, then add the cumin and cook for a minute more.

  2. Cut the sweet potato into 3 cm chunks, larger than feels right, and add them with the tomatoes and the water.

  3. Simmer, partly covered, for 18 to 22 minutes, until a knife goes into the sweet potato easily.

  4. Add the drained black beans and warm through for 8 minutes, pressing a few against the side of the pan to thicken the stew.

  5. Take the pan off the heat, stir in the lime juice, and scatter the coriander over.

The useful detail

Cut the sweet potato bigger than feels right. Small dice dissolves completely over twenty minutes and thickens the stew into a paste with nothing left to bite on.

Make it work for you

One serving is A deep bowl, half the pot. You can switch to a smaller portion in the ingredients above; it is three quarters of this, and it contains correspondingly less energy and protein. It is an option, not a goal.

  • Butternut squash instead of sweet potato

Less sweet and it holds its shape better.

Per serving: about 70 kcal less, about 1 g less protein, about the same fat.

  • Kidney beans instead of black beans

Larger and softer. Nutrition is not recalculated for this swap.

  • Lemon juice instead of lime

Rounder and less floral against the cumin.

Per serving: about the same energy, about the same protein, about the same fat.

Estimated nutrition

Per standard serving, calculated from the ingredients above. Nutrition changes with substitutions, brands and how much oil stays in the pan.

A plant dinner carried by a large quantity of beans, which is how a dish with no meat in it still reaches the low twenties for protein.

Each ingredient’s weight is multiplied by its USDA FoodData Central values per 100 g. The whole recipe is added up and divided by 2. Raw weights are used for meat, fish and vegetables; beans and lentils are drained weights. All of the oil is counted as eaten. Added salt is not included; sodium from stock, bread, cheese and tinned food is.

Storage and reheating

In the fridge
Cool it quickly, cover and refrigerate within 2 hours. The FDA chart gives soups and stews 3 to 4 days. Distinctly better on the second day, once the cumin has settled into the beans.
In the freezer
The same chart gives soups and stews 2 to 3 months in the freezer for best quality.
Reheating
Reheat until it reaches 74°C / 165°F, steaming hot throughout, stirring so it heats evenly.

Checked against US Food and Drug Administration, Refrigerator and Freezer Storage Chart, USDA Food Safety and Inspection Service, Leftovers and Food Safety, FoodSafety.gov, Safe Minimum Internal Temperatures and FoodSafety.gov, Cold Food Storage Chart. UK guidance from the Food Standards Agency is shorter, at two days for most leftovers.
