Cooking steps

  1. Heat the oven to 200°C / 400°F (180°C fan). Rub the potatoes with the oil and bake them for 55 to 65 minutes, until the skins are crisp and a knife goes in easily.

  2. Steam the cauliflower for 6 to 8 minutes, until tender, then mash it roughly with the cottage cheese.

  3. Halve the potatoes, scoop out about half the flesh and stir it into the cauliflower mixture.

  4. Pile the filling back into the skins, scatter the cheddar over and bake for 12 to 15 minutes, until hot all the way through and browned on top.

    Cooked when: 74°C / 165°F, steaming hot throughout. A food thermometer is the reliable way to tell.

  5. Scatter with the chives before serving.

The useful detail

Leave enough potato around the skin to support the filling. Scooped too thin, the skin folds under the weight and the filling ends up on the tray.

Make it work for you

One serving is One filled potato. You can switch to a smaller portion in the ingredients above; it is three quarters of this, and it contains correspondingly less energy and protein. It is an option, not a goal.
