Contains eggs, gluten, milk, mustard. Check the labels on packaged ingredients:

  • Dijon mustard. Many Dijon mustards also declare sulphites; check the label.
  • bread rolls. Rolls often contain soya and can contain milk, egg or sesame; check the label.

Cooking steps

  1. Bring a small pan of water to the boil, lower in the eggs and simmer for 10 minutes. Cool them in cold water, then peel and chop them.

    Cooked when: the whites are set and the yolks are firm.

  2. Mash about half the chickpeas with a fork and leave the rest whole.

  3. Mix the chickpeas with the eggs, yoghurt, chives and mustard.

  4. Split the bread rolls, fill them with the mixture and add the cucumber.

The useful detail

Keep some chickpeas whole for texture. Mashed completely the filling is a paste; half and half gives it something to bite on.

Make it work for you

One serving is One filled bread roll. You can switch to a smaller portion in the ingredients above; it is three quarters of this, and it contains correspondingly less energy and protein. It is an option, not a goal.

  • White beans instead of chickpeas

    Creamier, and they mash more smoothly.

  • 2% Greek yoghurt

    Thicker, so the filling stays in the roll.
