Check off ingredients as you go.

Contains gluten, milk. Check the labels on packaged ingredients:

  • roasted red peppers from a jar. Jarred peppers are packed in brine and can contain sulphites; check the label.
  • sourdough bread. Bread often contains soya and can contain milk, egg or sesame; check the label.

Cooking steps

  1. Beat the cottage cheese with a whisk for a full minute, until the curds have broken down and it is smooth.

  2. Drain the roasted peppers well and slice them into strips.

  3. Toast the sourdough bread properly, until it is almost darker than you would usually take it.

  4. Spread the cottage cheese thickly, lay the peppers over, and finish with the oil, a dusting of smoked paprika and the chopped chives.

The useful detail

Toast the bread almost too dark. Whipped cottage cheese is wet, and a pale slice goes soft underneath it within a minute of being spread.

Make it work for you

One serving is One slice of sourdough with 150 g of whipped cottage cheese. You can switch to a smaller portion in the ingredients above; it is three quarters of this, and it contains correspondingly less energy and protein. It is an option, not a goal.

  • Quark instead of cottage cheese

Already smooth, so no whisking needed. Sharper.

Per serving: about 40 kcal less, about 1 g less protein, about 6 g less fat.

  • Ricotta instead of cottage cheese

Milder and creamier, with less protein for the same weight.

Per serving: about 80 kcal more, about 5 g less protein, about 9 g more fat.

  • Rye bread instead of sourdough

Denser and better still under a wet topping.

Per serving: about 5 kcal less, about 1 g less protein, about the same fat.

Estimated nutrition

Per standard serving, calculated from the ingredients above. Nutrition changes with substitutions, brands and how much oil stays in the pan.

Each ingredient’s weight is multiplied by its USDA FoodData Central values per 100 g. The whole recipe is added up and divided by 2. Raw weights are used for meat, fish and vegetables; beans and lentils are drained weights. All of the oil is counted as eaten. Added salt is not included; sodium from stock, bread, cheese and tinned food is.

Storage and reheating

In the fridge
Keep the whipped cottage cheese covered for 3 to 4 days, or to the date on the tub if that is sooner. Assemble when you eat.
Reheating
Not needed; this is a cold dish.

Checked against US Food and Drug Administration, Refrigerator and Freezer Storage Chart, USDA Food Safety and Inspection Service, Leftovers and Food Safety, FoodSafety.gov, Safe Minimum Internal Temperatures and FoodSafety.gov, Cold Food Storage Chart. UK guidance from the Food Standards Agency is shorter, at two days for most leftovers.
