Cooking steps

  1. Squeeze the grated courgette hard in a clean tea towel until it stops dripping.

  2. Mix it with the sweetcorn, eggs and flour into a thick batter.

  3. Warm half the oil in a large non-stick frying pan over medium heat. Spoon in three mounds of batter and press each one flat with the back of the spoon, to about 1 cm.

  4. Cook for 3 to 4 minutes on each side, until golden and set right through with no wet batter in the middle.

    Cooked when: 71°C / 160°F in the centre. A food thermometer is the reliable way to tell.

  5. Repeat with the rest of the oil and batter. Serve three each with the cottage cheese and chives.

The useful detail

Press each fritter lightly so the centre cooks evenly. Left as a mound, the middle is still batter when the outside is brown.

Make it work for you

One serving is Three fritters with 100 g of cottage cheese. You can switch to a smaller portion in the ingredients above; it is three quarters of this, and it contains correspondingly less energy and protein. It is an option, not a goal.

  • Low-fat cottage cheese

    Lighter, and it spreads more easily.

Storage and reheating

In the fridge
Cool, cover and refrigerate within 2 hours of cooking. Eat within 3 to 4 days. The fritters keep their shape well and reheat in a dry pan.
