Green smoothie with spinach, pineapple and Greek yoghurt

A bright green smoothie of spinach, pineapple and fat-free Greek yoghurt, with lime to keep it fresh. The pineapple leads the flavour, so it tastes of fruit rather than leaves.

Contains milk.

Cooking steps

  1. Pour the milk into the blender jug and add the spinach.

  2. Blend on high for 30 seconds, until the milk is evenly green and no pieces of leaf are left.

  3. Add the Greek yoghurt, frozen pineapple, ground flaxseed and lime juice.

  4. Blend on high for about 45 seconds, until smooth and pale green. Pour into a glass and drink it within 10 minutes; the colour dulls as it stands.

The useful detail

Blend the leaves with the liquid on their own first. With the yoghurt and frozen fruit already in, the blades cannot pull the spinach down, and you get a smoothie full of green flecks instead of an even colour.

Make it work for you

One serving is One glass, about 400 ml. You can switch to a smaller portion in the ingredients above; it is three quarters of this, and it contains correspondingly less energy and protein. It is an option, not a goal.

  • Kale instead of spinach

Stronger and more bitter. Strip the leaves from the stalks and blend them with the milk for a full minute.

Per serving: about 5 kcal more, about the same protein, about the same fat.

  • Frozen mango instead of pineapple

Thicker and sweeter, and less sharp.

Per serving: about 10 kcal more, about the same protein, about the same fat.

  • 2% Greek yoghurt instead of fat-free

    Creamier and less sharp.

Per serving: about 30 kcal more, about the same protein, about 3 g more fat.

Estimated nutrition

Per standard serving, calculated from the ingredients above. Nutrition changes with substitutions, brands and how much oil stays in the pan.

The yoghurt carries nearly all of the protein, and the fruit and flaxseed most of the fibre. Spinach adds colour and little else in this quantity.

Each ingredient’s weight is multiplied by its USDA FoodData Central values per 100 g. The whole recipe is added up and divided by 1. Added salt is not included; sodium from stock, bread, cheese and tinned food is.

Storage and reheating

In the fridge
Best drunk straight away. If you keep it, cover it and refrigerate within 2 hours, and drink it within 24 hours; it separates, so shake or stir it first. The colour will dull to olive overnight, which does not affect the taste.
Reheating
Not for reheating. Serve cold.

Checked against US Food and Drug Administration, Refrigerator and Freezer Storage Chart, USDA Food Safety and Inspection Service, Leftovers and Food Safety, FoodSafety.gov, Safe Minimum Internal Temperatures and FoodSafety.gov, Cold Food Storage Chart. UK guidance from the Food Standards Agency is shorter, at two days for most leftovers.
