Tofu and aubergine peanut stew

Bring the water to the boil, pour in the polenta in a thin stream, whisking, and cook over low heat for 5 to 8 minutes, stirring, until thick.
Brush a small baking dish with a little of the oil, spread the polenta in it and leave it to firm up while you make the topping.
Heat the oven to 190°C / 375°F (170°C fan). Warm the rest of the oil in a frying pan over medium-high heat and cook the mushrooms for 6 to 8 minutes, until browned.
Add the beans, stock and thyme and simmer for 5 minutes, until saucy but not dry. Spoon over the polenta.
Bake for 20 to 25 minutes, until hot all the way through and bubbling at the edges.
Cooked when: 74°C / 165°F, steaming hot throughout. A food thermometer is the reliable way to tell.
Keep the bean topping spoonable rather than dry. Polenta absorbs liquid from above as it bakes, so a topping that looks slightly wet in the pan is right by the time it reaches the table.
One serving is Half the dish. You can switch to a smaller portion in the ingredients above; it is three quarters of this, and it contains correspondingly less energy and protein. It is an option, not a goal.
