Cooking steps

  1. Toast the semolina in a dry pan over medium heat for 3 to 4 minutes, stirring constantly, until it smells nutty and has turned a shade darker. Tip it onto a plate.

  2. Soften the finely diced onion in the oil in the same pan for 6 minutes, then add the turmeric and cumin and cook for a minute.

  3. Add the peas and the water and bring to a simmer.

  4. Rain the toasted semolina in with one hand while stirring hard with the other, then cook on low for 4 to 5 minutes until it thickens and comes away from the sides.

  5. Serve with the yoghurt and the coriander.

The useful detail

Toast the semolina before any liquid goes near it. Untoasted it swells into a single glutinous mass; toasted, the grains stay separate and the whole thing is light.

Make it work for you

One serving is A bowl with half the semolina and 75 g of yoghurt. You can switch to a smaller portion in the ingredients above; it is three quarters of this, and it contains correspondingly less energy and protein. It is an option, not a goal.

  • Quark instead of Greek yoghurt

Thicker and sharper against the spice.

Per serving: about the same energy, about the same protein, about 1 g less fat.

  • Sweetcorn instead of peas

Sweeter and firmer, with less protein.

Per serving: about 10 kcal less, about 3 g less protein, about 1 g more fat.

  • Couscous instead of semolina

Coarser and much faster; soak rather than simmer it.

Per serving: about 10 kcal more, about the same protein, about the same fat.

Estimated nutrition

Per standard serving, calculated from the ingredients above. Nutrition changes with substitutions, brands and how much oil stays in the pan.

A savoury breakfast where the yoghurt and the peas carry most of the protein, and the semolina is the vehicle rather than the point.
