  • wholemeal bread. Bread often contains soya and can contain milk, egg or sesame; check the label.

Cooking steps

  1. Warm the oil in a frying pan over medium-high heat. Add the mushrooms and cook for 6 to 8 minutes, until their liquid has evaporated and they have browned.

  2. Stir in the smoked paprika for 30 seconds, then add the tomatoes and haricot beans.

  3. Simmer for 8 to 10 minutes, stirring now and then, until the sauce is thick enough to sit on a spoon rather than run off it.

  4. Toast the bread, divide the beans over it and scatter with the parsley.

The useful detail

Reduce the sauce enough to keep the toast from becoming immediately soggy. If it pools around the beans in the pan, it will go straight through the bread on the plate.

Make it work for you

One serving is One slice of toast with half the beans. You can switch to a smaller portion in the ingredients above; it is three quarters of this, and it contains correspondingly less energy and protein. It is an option, not a goal.

  • Cannellini beans instead of haricot

    Larger and creamier, and they crush more readily into the sauce.

Storage and reheating

In the fridge
Cool, cover and refrigerate within 2 hours of cooking. Eat within 3 to 4 days. The beans keep well; toast fresh bread rather than storing it assembled.
In the freezer
Freezing keeps food safe indefinitely; the texture is best if it is eaten sooner rather than later.
Reheating
