Heat the oven to 180°C / 350°F (160°C fan). Brush two ovenproof dishes of about 400 ml with a little of the oil.
Warm the rest of the oil in a frying pan over medium heat. Add the spinach and stir for 1 to 2 minutes, until just wilted. Tip it into a sieve and press out as much liquid as you can with the back of a spoon.
Divide the spinach between the dishes and spoon the cottage cheese over it. Make two hollows in each and crack an egg into each hollow. Break the feta into small pieces and scatter it around the eggs.
Bake for 20 to 25 minutes, until the whites are set and the yolks are firm.

Meanwhile, toast the bread. Scatter the chives over the eggs and serve each dish with a slice of toast.
Squeeze excess liquid from the spinach before assembling. Wilted spinach holds more water than it looks, and whatever stays in runs out as the eggs bake and leaves them sitting in a watery pool.
