Contains milk, tree nuts, sulphites. Check the labels on packaged ingredients:

  • dried apricots. Most dried apricots are treated with sulphites, which are a declared allergen. Unsulphured apricots are darker.

Cooking steps

  1. Chop the dried apricots small, about the size of a pea.

  2. Put the cooked quinoa, milk, cinnamon and apricots in a small pan and warm over medium-low heat for 5 to 6 minutes, stirring, until the milk has mostly been absorbed and the mixture is creamy.

  3. Meanwhile toast the flaked almonds in a dry pan for 2 to 3 minutes, shaking often, until golden. Watch them; they turn in seconds.

  4. Divide the warm quinoa between two bowls, top each with the skyr and scatter the almonds over just before eating.

The useful detail

Chop the apricots small and cook them in the milk from the start. Whole, they stay chewy and sweeten only themselves; small, they soften and sweeten the whole bowl so nothing else has to.

Make it work for you

One serving is A bowl of warm quinoa with 150 g of skyr and half the almonds. You can switch to a smaller portion in the ingredients above; it is three quarters of this, and it contains correspondingly less energy and protein. It is an option, not a goal.

Storage and reheating

In the fridge
Cool, cover and refrigerate the quinoa within 2 hours and eat within 3 to 4 days. Keep the almonds in a jar at room temperature and the skyr in its own pot.
Reheating
Reheat with a splash of milk, stirring, until 74°C / 165°F, steaming hot throughout.
